Ingredients: (for 20 energy balls) 

1/2 cup nuts of your choice (a mix of walnuts and whole almonds tastes perfect – you can use pecans) 

1/3 cup coconut flakes 

1.5 tablespoons cocoa powder 

1 tablespoon water 

1 tablespoon vegetable oil 

15 pitted Medjool dates 

A pinch of salt 


in a food processor, process the nuts until they are fine 

Add the rest of the ingredients and process on medium/high speed until a dough form 

Transfer to a bowl 

Using a tablespoon as a scoop, form the balls (tablespoon size) 

Roll the balls in extra coconut flakes 

Chill until serving

1 cup fine rice 

3/4-1cup sugar (depends on how sweet you like it

1.5 TBS cinnamon 

1.5 TBS caraway 

7 cups water

**Note that u can use more spices if you wish**


Mix all the ingredients together and mix well with a hand mixer 

Cook on medium-high heat while stirring until it boils 

Turn heat to low and stir every 10 mn for 1.5 hours at least (up to 3 hours if you’re using more quantities) 

Pour into serving bowls 

Allow to cool before garnishing with coconut flakes, raw nuts (you have to soak the almonds, cashews and pine nuts if using with cold water then drain)  and raisins

2 and a 1/2 cups flour mixed with 1 TBS baking powder 

4 eggs 

1 tsp vanilla 

1 tsp orange zest

1 cup sugar 

1/2 cup oil 

1 cup liquid skimmed milk or orange juice 

2-3 TBS cocoa powder 


Preheat oven to 170 degrees C

Beat together eggs, sugar, vanilla and orange zest on max speed for 2-3 mn 

Gradually add oil and milk/juice 

Add flour mix while beating just until incorporated 

Grease a pan with oil 

Add 3/4 of the mix to the pan, leave 1/4 of the mix in the bowl 

Add the cocoa to remaining mix and beat well

Place the cocoa mix on top of the vanilla one in the pan and mix with a small spoon in a random circular motion 

Bake for 40- 50 mn

Allow to cool before removing from pan
