Beef marinade:

1 kg beef strips (tender cut)
3-4 TBS red vinegar
1 TBS shawarma spices
Salt and black pepper
1 garlic clove, minced
3 whole cardamoms
2 bay leaves
1 TBS vegetable oil
1 TBS yogurt
1 tsp tahini
1-2 crushed garlic

Mix all ingredeints together

marinade for 2 hours at least


Heat a wide pot
Start browning/cooking the meat in batches moving the browned batch aside before adding the next one
Stir occasionally until beef is well cooked
Stir in tomato slices (optional) and leave for around 5 mn until they are tender
You’re done!

Serve with tahini sauce, parsley mixed with onions and sumac, and pickles if you like!

Tahini Sauce

3 TBS tahini
1 garlic clove, minced
Juice of 1 lemon (or more if you like it more sour)
A bit of water and salt

Mix all together
add cold water while mixing until you get the desired consistency

Ciabatta bread

fresh mozzarella cut into chunks

some basil leaves

tomato slices

1 TBS basil sauce

1 tsp olive oil

black pepper


Fill ciabatta bread with fresh mozzarella, basil leaves, tomato slices, black pepper, a drizzle of olive oil, balsamic vinegar and my basil sauce

Heat the sandwich in a preheated oven (180 degrees c) for around 10 mn then grill a little to get those beautiful grill lines!

Basil sauce

2 cups basil leaves
2 TBS lightly roasted pine nuts
1/2 cup good olive oil
A squeeze of lime
A pinch of lime zest
A tiny bit of black pepper
In a food processor, place the basil, pine nuts, black pepper, lime zest and squeezed lime (squeeze directly in the processor u only need a tiny bit)

Process all until u obtain a fine mixture
With the processor on low speed

Add the olive oil as a thin thread in a steady motion until they are all well incorporated

Use immediately,or refrigerate/ freeze for later use!

1 kg medium size shrimp, peeled and deveined
2 onions, julienned
1 green and 1 red bell peppers, thinly sliced
1 TBS olive oil
For the marinade:
1/2 tsp cumin
1/2 tsp black pepper
1/2 (or more) tsp chilli powder
1/2 tsp paprika
1/2 tsp dried oregano
Some salt
2 TBS lime juice
1 tsp lime zest
1 minced garlic clove



Marinade the shrimp in the marinade for 10 mn in a sealed plastic bag
Meanwhile, heat a skillet
Add olive oil, bell peppers and onions
Cook for around 5 mn on medium heat until they become tender but still crispy
When shrimp has marinated
Add to the skillet, mix well and cook for around 5 mn until it becomes pink in color
Serve with multi-grain tortilla, sour cream, jalapeños, salsa, and guacamole.

Beef Marinade

Marinade 1 kg tender beef strips in the following:

1/2 tsp cumin
Black pepper and salt
1 tsp paprika
1/2 tsp hot pepper
1 TBS worcestershire sauce
1 tsp olive oil
1 TBS lime juice
1 minced garlic clove

For cooking:

2 onions, julienned
2 cups julienned colored peppers



Heat a wide pan
Add 1 tsp olive oil
Add onions and bell peppers
Cook until crispy tender
Set aside
Add beef strips in batches
Cook thoroughly
Re add the onions and bell peppers
Mix well to combine
You’re done!

Cooked Salsa

Diced tomato
Diced onion
Diced jalapeno
Diced green bell pepper
Minced garlic
Lime juice
Tiny bit of cumin, sugar ,
salt and black pepper
Tomato paste
Some cilantro

COMBINE ALL, process to desired conistency
Simmer for 10-15 mn
Chill before serving



2 ripe avocado, mashed with a fork – keep some chunks if u wish
2 TBS lemon juice (or more for taste)
1 tsp lemon zest
A pinch of salt, black pepper and chili flakes (optional)
3/4 cups quartered cherry tomatoes
A handful of coriander or parsley
1 cup chopped spring onions
1 garlic clove, crushed


Combine mashed avocados with lemon juice, lemon zest, chili flakes, salt and black pepper
Add all other ingredients and mix well
Refrigerate covered until serving

Beef Patties:
Sauté some onions and fresh mushroom with salt, lots of black pepper and worcestershire sauce
Let them brown well
Remove from pan
Leave aside so they cool down

Patty mix:
500 grams finely minced lean beef
2 tsp mustard
1 minced garlic
Some salt and pepper
The mushroom/onion mix
Mix all together
Form into patties and place in the fridge for 10 minutes
Grill for around 2 minutes on each side
Place cheese on the hot side the patty so it melts

Barbecue sauce:
Combine in a pan: 1 cup ketchup, 1/2 cup water, 1/4 cup apple cider vinegar, 2.5 TBS light brown sugar, 2.5 TBS sugar, 1/4 tsp of each: black pepper, ground mustard, 1/2 TBS of each lemon juice and Worcestershire sauce
Bring to boil, reduce heat let simmer for 1 hr stirring occasionally

Baked Potato:

500 grams baby/small potato cut into wedges
2 TBS olive oil
Some black pepper, salt and paprika
Bake in an oven at 200 degrees for around 30 mn

Layer it up:
More grilled onions and mushrooms
Serve with grilled potato and barbecue sauce/mustard/ketchup

Chicken Marinade

For 1 kilogram chicken, add:

1 TBS veg oil

2 TBS lemon juice

1 tsp of: cumin, paprika, dried oregano, fajita spices

A pinch of salt, white and black pepper

1 TBS soy sauce

(u can also add chilli flakes or chilli powder)

2 Colored pepper, julienned

2 onions, julienned

1 TBS oil for sautéing veggies


Marinade the chicken with the spices and all for 1-4 hours (we can donwithout marination)

Geat a wide pan, add oil, sauté the veggies until crispy tender 2-3 mn (do not over cook them)

Remove vegetables from the pan

Add the marinated chicken and stir fry until they’re well cooked

Add the veggies to the chicken, mix together and you’re done!

Pico de gallo


1 tomato, finely chopped

1 onion, finely chopped

1 green onion, finely chopped

Juice of 1/2 lime

Salt and black pepper

1 TBS chopped jalapeno

1 TBS chopped cilantro

A sprinkle of galric powder


Combine everything together

Cover and refrigerate until serving

Mashed avocado sauce:

1 chopped avocado

Salt, pepper and chilli flakes to taste

Juice of 1/2 lime

1/2 tsp lime zest

Mash avocados with all the ingredients

cover and refrigerate until serving

1 kg chicken breasts, cut thin lengthwise

3 large garlic cloves, minced

1 TBS white vinegar

3 tbsp lemon juice

1 TBS olive oil

3 TBS Greek yogurt

1 and a 1/2 dried oregano

1 tsp salt

black pepper to taste


Mix all of the marinade ingredients together

Add chicken and mix well 

Marinate for 2 hours at least

Heat a pan 

Brown chicken for 3 mn on each side

Transfer to a preheated oven (170 degrees) 

Cook for around 10 mn until the chicken is well cooked

Transfer chicken to a plate

Cover loosely with foil and allow to rest for 5 minutes before serving



2 cucumbers (pulp removed, drained well)

1 1/4 cups plain Greek yogurt

1 TBS lemon juice

1 TBS Olive oil

1 garlic clove , minced

1/2 tsp salt

Black pepper

1 TBS chopped parsley

1 TBS chopped dill


Coarsely grate or chop the cucumber, let them dry by wrapping them in paper towels or a tea towel and squeeze to remove excess liquid.

Place cucumber in a bowl 

Add remaining ingredients then mix to combine. 

Cover and refrigerate until serving


mix all of the following ingredients together:

2 tomatoes , desseeded and diced

2 cucumbers , diced

1/2 red onion , finely chopped

1/2 cup chopped parsley 

Salt and pepper

cover and refrigerate until serving

Form the Gyros 

Fill pita bread with chicken, some tzatziki and salad

Serve immediately!
