Ingredients:

1 kg skinless chicken thighs (you can use any part of the chicken)
2 TBS sumac
1 tsp black pepper
1 tsp salt
1 tsp lime/lemon zest
Juice of 1/2 a lemon
Small onions or onion wings
Lime/lemon slices
1 TBS olive oil

Preparation:

Mix everything together
Bake at 140 degrees for 1.5 hours in the middle of the oven

(you can bake the chicken at 170 degrees for around 45 mn but slow cooking yields more tender chicken)

Ingredients:

2 and a 1/2 cups flour mixed with 1 TBS baking powder and a pinch of  salt
4 eggs
1 tsp vanilla
1 cup sugar
1/2 cup oil
1 cup canned pineapple juice

Preparation:

preheat oven to 170 degrees C
Beat together eggs, sugar, vanilla on max speed for 2-3 mn
Gradually add oil and juice
Add flour mix while beating just until incorporated
Grease a pan with oil
Bake for 40- 50 mn
When it cools down, flip and decorate with strawberries and chocolate hazelnut spread (OPTIONAL)

Ingredients:

340 gram butter, melted, kept warm
150 grams sugar
4 eggs
1 tsp vanilla
250 gram chocolate melted (i used a mix of milk and dark chococolate but u can use whatever you like)
Sifted togeher: 200 grams flour, 60 grams cocoa powder, 1 tsp salt
250 gram chocolate chunks

Preparation:

Preheat oven to 180 degrees celsius
In a bowl, mix together warm butter and sugar until well combined
Add eggs and vanilla and mix until creamy
Add melted chocolate and mix till combined
Add the flour, cocoa and salt mixture and combine using a spatula
Fold in chocolate chunks
Transfer to a pan
Bake for 20-25 mn

Ingredients:

1. 1 3/4 cups flour
2. 1 cup sugar
3. 2 tsp baking powder
4. 1 1/2 tsp baking soda
5. 1/2 tsp salt
6. 1/2 cup cocoa powder
7. 2 eggs at room temperature
8. 1/2 cup vegetable oil
9. 1 cup liquid skimmed milk
10. 2 tsp vanilla
11. 1 cup BOILING water

Preparation:

Preheat oven to 17o decrees C
Combine well the ingredients 1 through 6
Add the following 7 through 10 ingredients while mixing wih an electric mixer on medium speed for 2 minutes
Add the hot water and mix with a spoon
Bake for 40-50 mn if doing a cake and 12-15 mn for cupcakes

Ingredients:

2 1/4 cups all-purpose flour
3/4 cup white sugar
3/4 cup chocolate chips
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 egg
1 cup plain yogurt ( you can use low fat yogurt)
1/2 cup skimmed milk
1/2 cup vegetable oil
1/4 cup chocolate chips

Preparation:

Preheat oven to 170 degrees C
Grease a pan with oil
Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl.
Whisk egg, yogurt, milk, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended.
Pour into cake pan
OPTIONAL: sprinkle with remaining 1/4 cup chocolate chips on top
Bake in preheated oven until a toothpick inserted into the center comes out clean, about 35-40 minutes.
Cool for 10 minutes before removing from pan

Ingredients:

2 eggs 

2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar

4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Preparation:

Preheat waffle iron. 

Beat eggs in large bowl with hand beater until fluffy. 

Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth

Pour mix onto hot waffle iron. 

Cook until golden brown. 

Serve with fresh berries/honey

Ingredientsp:

1 cup sugar 

1/2 cup oil 

1 cup liquid skimmed milk or orange juice 

2-3 TBS cocoa powder 

Preparation:

Preheat oven to 170 degrees C

Beat together eggs, sugar, vanilla and orange zest on max speed for 2-3 mn 

Gradually add oil and milk/juice 

Add flour mix while beating just until incorporated 

Grease a pan with oil 

Add 3/4 of the mix to the pan, leave 1/4 of the mix in the bowl 

Add the cocoa to remaining mix and beat well

Place the cocoa mix on top of the vanilla one in the pan and mix with a small spoon in a random circular motion 

Bake for 40- 50 mn

Allow to cool before removing from pan

Olive Bread

Ingredients:
3 1/4 cups all purpose flour
1 tablespoon sugar
1 tablespoon active dry yeast
1 teaspoon salt
1/2 teaspoon baking powder
1/2 cup warm water
1/2 cup yogurt (or u can use 1 cup water without the yogurt
1/4 cup olive oil
Handful of diced olives
A handful of fresh oregano/thyme OR 1 tsp dried oregano

Preparation:

Mix together the yeast, sugar, warm water and 1 cup of flour.

Put aside covered for 10 minutes.
Once the yeast starts, add the other ingredients and mix together for few minutes until the dough is soft.

Put some olive oil or flour in the pan, divide the dough into small balls (note that when you divide the dough they may seem small but they will rise again after resting and baking so keep hem small)

Place the bread balls in a  pan ( leave  space between them).

Let rest for an hour

bake in a preheated oven (180 degrees C) for 10 to 15 minutes until well browned

Baked feta cheese and tomato:

Place feta cheese in a pan
Add cherry tomato
Drizzle some olive oil
Bake at 220 degrees C until its top browns well

Beef Patties:
Sauté some onions and fresh mushroom with salt, lots of black pepper and worcestershire sauce
Let them brown well
Remove from pan
Blend
Leave aside so they cool down

Patty mix:
500 grams finely minced lean beef
2 tsp mustard
1 minced garlic
Some salt and pepper
The mushroom/onion mix
Mix all together
Form into patties and place in the fridge for 10 minutes
Grill for around 2 minutes on each side
Place cheese on the hot side the patty so it melts

Barbecue sauce:
Combine in a pan: 1 cup ketchup, 1/2 cup water, 1/4 cup apple cider vinegar, 2.5 TBS light brown sugar, 2.5 TBS sugar, 1/4 tsp of each: black pepper, ground mustard, 1/2 TBS of each lemon juice and Worcestershire sauce
Bring to boil, reduce heat let simmer for 1 hr stirring occasionally

Baked Potato:

500 grams baby/small potato cut into wedges
2 TBS olive oil
Some black pepper, salt and paprika
Bake in an oven at 200 degrees for around 30 mn

Layer it up:
Beef/cheese
Lettuce
Tomato
More grilled onions and mushrooms
Serve with grilled potato and barbecue sauce/mustard/ketchup

Ingredients: 

5 eggs at room temperature

1 cup powder sugar 

1 tsp vanilla 

1 cup vegetable oil 

1 cup flour 

1 TBS baking powder 

2 cups coconut flakes 

1/2 or 3/4 sugar syrup (قطر) 

(Depends on how sweet u like it) 

Preparation:

Preheat oven to 170 degrees C 

Beat eggs, sugar and vanilla for 2 mn on high speed 

While beating gradually add oil, flour and baking powder until they re combined 

Gently fold coconut flakes into the batter 

Bake for 30-40 min 

Pour cold sugar syrup on the hot cake 

Garnish with some extra coconut flakes
