Mjadra hamra, a specialty of South Lebanon, made of red lentils and coarse wheat bulgur. What sides would you have with it?
One pot Mjadara!
3 big onions, finely chopped (preferably in a food processor if not its fine but they have to be very fine)
2 cups small lentils عدس احمر
1.5 cups coarse whole wheat bulgur (برغل اسمر خشن)
Salt, black pepper and cumin to taste
1/3 cup good quality olive oil
Heat a wide pan, when its hot add the olive oil and onions and salt , cover and stir frequently
Leave till 1/2 of the onions blacken (half burned literally coz thats what give the Mjadara its brown color)
Add the washed, drained lentils and stir to combine with onions
Add cumin and black pepper
Add water 3 cm above the lentils
When the water boils, decrease the heat, cover and simmer till the lentils are well cooked
Wash and drain the bulgur
Add to the pan, stir, cover for 10-15 mn till the bulgur softens!
Serve with salad/yogurt/a mix of fresh vegetables, olives and makdous 😍👌 .

After meatless Monday, here comes almost taco Tuesday.. it’s beef fajitas but who cares 🙄
Served next to salsa 🍅, guacamole 🥑, whole wheat tortilla bread 🌯, and sour cream 🍶.

Beef fajitas new ••BEEF MARINADE••
1 kg tender beef strips
1/2 tsp cumin
Black pepper and salt
1 tsp paprika
1/2 tsp hot pepper
1 TBS worcestershire sauce
1 tsp olive oil
1 TBS lime juice
1 minced garlic clove
2 onions, julienned
2 cups julienned colored peppers

Marinade the beef with all marinade ingredients
Heat a wide pan
Add 1 tsp olive oil
Add onions and bell peppers
Cook until crispy tender
Set aside
Add beef strips in batches
Cook thoroughly
Re add the onions and bell peppers
Mix well to combine
You’re done! **Serve next to sour cream, guacamole, salsa and whole wheat tortilla bread 🌮🥙🌯🥑🍅** ••SALSA 🍅🍅••
Trying to make cooked salsa: (no clear measurements)
Diced tomato
Diced onion
Diced jalapeno
Diced green bell pepper
Minced garlic
Lime juice
Tiny bit of cumin, sugar ,
salt and black pepper
Tomato paste
Some cilantro

COMBINE ALL, process to desired conistency
Simmer for 10-15 mn
Chill before serving ••GUACAMOLE 🥑🥑•• Ingredients:
2 ripe avocado, mashed with a fork – keep some chunks if u wish
2 TBS lemon juice (or more for taste)
1 tsp lemon zest
A pinch of salt, black pepper and chili flakes (optional)
3/4 cups quartered cherry tomatoes
A handful of coriander or parsley
1 cup chopped spring onions
1 garlic clove, crushed
Combine mashed avocados with lemon juice, lemon zest, chili flakes, salt and black pepper
Add all other ingredients and mix well
Refrigerate covered until serving .

I know it’s still too early for lunch, but that’s what happens when you wake up at 6 a.m.

Loubye bl zet (green beans in tomato sauce)


1 kilogram green beans, edges removed, diced into 3 cm pieces, washed and drained
1/2 kilogram tomatoes, finely chopped
2-3 onions finely chopped
3-4 garlic cloves, finely minced
1 TBS tomato paste (u can omit this)
1/2 cup water (or less if tomatoes are too juicy)
Salt and black pepper to taste
2 TBS olive oil

Heat a wide pot, add olive oil and onions and stir a little, leave until onions are partially translucent
Add the garlic, green beans, salt and pepper
Stir occasionally while cooking on medium/low heat until the the color of the green beans changes to pale (until they’re yellowish/green)
Add the tomatoes and tomato paste and stir, leave for around 10 mn
Add water and let simmer until beans are well cooked

Serve with bread and a side dish of vegetables 😍

Rosé pesto shrimp pasta 🍅🍤🌿🍝 all ingredients are from @la3andak.app
3/4 cup pesto sauce (recipe follows)
1.5-2 TBS tomato paste
1 cup cherry tomato, halved
500 grams uncooked shrimp
200 ml low fat cooking cream
1 cup pasta water
2 garlic cloves, minced
Italian spices, salt and black pepper to taste
Hot pepper/chili flakes are optional
A handful of fresh basil, finely chopped
500 grams cooked pasta
Heat a pot
Add pesto sauce and tomato paste and heat them
Add tomato, shrimp, salt, black pepper and italian spices and cook for 3 mn
Add fresh basil, cooking cream and pasta water and let simmer for around 5-7 mn
Add the cooked pasta and combine everything together
Serve with some grated parmesan cheese and devour 🤭

PESTO SAUCE RECIPE (minus parmesan)
2 cups basil leaves
2 garlic cloves
2 TBS lightly roasted pine nuts
1/2 cup good olive oil
A squeeze of lime
A pinch of lime zest
A tiny bit of black pepper
In a food processor, place the basil, pine nuts, garlic, black pepper, lime zest and squeezed lime (squeeze directly in the processor u only need a tiny bit), process all until u obtain a fine mixture
With the processor on low speed, add the olive oil as a thin thread in a steady motion until they are all well incorporated
Add the parmesan and process just until blended
Use immediately, u can also refrigerate or freeze for later use! .
