
Ingredients:
Parchment paper to line the baking pan
1 can pineapple slices, 1/2 cup of its juice reserved for cake
1/4 cup brown sugar
2.5 cups flour combined with 1 TBS baking powder
4 whole eggs
1 cup sugar
1 tsp vanilla
1/2 cup low fat yogurt
1/2 cup veg oil
Preparation:
Preheat oven to 170 degrees celsius
Line a pan with parchment paper, grease with some oil , sprinkle evenly the brown sugar and line the pineapple slices
Beat eggs with sugar and vanilla for 2 mn
Add while beating 1/2 cup oil, 1/2 cup juice and 1/2 cup yogart until well combined
Gradually add the flour mix to the eggs mix until combined (do not over mix)
Add the cake batter on top of the pineapples
Bake for 40-45 mn
Allow cake to cool before turning over and removing the parchment paper
